AHPC Studies Document the Prevalence of Foie Gras on Menus and Denver Voters’ Support of a Foie Gras Ban

The Animal- Human Policy Center at Colorado State University has released two new studies on foie gras.

Denver voter perspectives on foie gras bans

To examine public perspectives on foie gras and potential bans on foie gras, we conducted intercept interviews with 100 Denver voters to assess their awareness of foie gras, perspectives on its production, and potential support for a ban on foie gras produced through force feeding.

• Although over half of respondents had heard of foie gras, only 23% knew that force feeding is the primary production method, suggesting that public awareness of the associated animal welfare concerns is limited.
• Once informed about the force feeding process, 79% said they would support a ban, with animal cruelty and welfare concerns as the dominant reasons.

Prevalence of foie gras on menus

To inform ongoing policy discussions and consumer research, we conducted a large-scale web scraping analysis in April 2026 to measure how frequently foie gras appears on restaurant menus across 21 major U.S. metropolitan areas.

• We identified 14,454 restaurants in cuisine categories where foie gras could plausibly appear. Menus were successfully obtained for 11,986. A total of 156 restaurants were confirmed to currently serve foie gras based on menus corroborated by multiple sources or directly scraped from active restaurant websites.
• Foie gras appears disproportionately at restaurants listed with overall higher ($$$ and $$$$) price points.
• Most foie gras dishes appear as appetizers or mid-range items, typically priced between $15–$30. The average price of a foie gras dish was similar ($25.42) compared to other menu items at the same restaurant ($23.89). The average premium paid for a foie gras appetizer compared to other appetizers was $1.
• New York City dominates in the total number of confirmed restaurants with foie gras, followed by Las Vegas, Washington D.C., Miami, and Atlanta.
